Pie Day!

I should set up a stand on the street corner, because I was a little over ambitious in my pie making today! I made the usual awesome pork pies, but I also made tikka masala turkey pies (couldn't find ground chicken at Safeway) which translated to chicken tikka masala in the crockpot. I bought three cans of fruit pie filling, but only ended up using the cherry and apple fillings. I had plans for taco pies, but we don't have enough freezer safe containers. Out of the big 180 count box of pie shells from Costco, I used 60 this morning. My co-workers are going to love me tomorrow when I bring in the fruit tarts.

The trick is to sync everything so that the oven is constantly in use and have everything ready from a sink full of hot soapy water to the cooling racks.


1. Line baking sheets with pie shells to thaw.
2. Food process onions.
3. Fill pie shells with fruit filling.
4. Pre-heat frying pan.
5. Add 1 cup of onions and a 400 gram package of ground turkey into frying pan. Brown.
6. While turkey and onions are browning, core, halve and food process apples for pork pie recipe.
7. Pre-heat oven to 400.
8. Mix browned turkey and onions with tikka masala sauce in a large bowl. Set aside.
9. Pop in the fruit pies. Cook 20 minutes.
10. Fill pie shells with turkey filling.
11. Add potatoes, celery and mushrooms to the food processor for pork pies.
12. Wash frying pan.
13. Take out fruit pies, put turkey pies in. Cook 20 minutes.
14. Add pork pie seasonings to food processor bowl and stir.
15. Brown pork in frying pan. Add ingredients from food processor. Stir, stir, stir!
16. Fill pie shells with pork filling.
17. Take turkey pies out, put pork pies in. Cook 20 minutes.
18. Freeze.

Whew! And now we're set for lunches, quick dinners and desserts for a while.
