Corn Flake Shake n' Bake
May. 6th, 2008 07:10 pmThe best accidents are often in the kitchen, and I don't mean the time I set aluminum foil on fire. I couldn't find chicken legs tonight for dinner, so while browsing over the discount meat, I picked up a package of turkey breast that was expiring tomorrow. It seemed criminal to allow meat to expire, and it was 30% off, so I popped it the cart. When I got home, I discovered, duh, that there was just one turkey breast in the package, and boy, was it massive. I thunked myself on the forehead for getting that a turkey is much bigger than a chicken! Now when substituting one thing for another, it is possible to make something quite regrettable like the orzo loaf, but this turned out pretty pleasant. I cut the breast up into four reasonably sized pieces and rolled each piece in a mixture of crushed corn flakes, salt, pepper and tarragon because there wasn't any Shake n'Bake in the cupboard. Tarragon has such a pleasant, warm smell and always compliments turkey. I'm going to try this corn flake Shake n'Bake recipe next time. It certainly sounds like it would add more moisture.
